CRISPY PORK BOWL

Some pork dishes are awesome...and then even better the next day! This holds true for my friend Amanda's citrus marinated pork with pickled red onion (from her website One Family One Meal). As a result, you have a one-pot meal prepared for two different culinary experiences. I tend to prefer the crispy which is what you see below (it's deeeelicious!!) but my son loves the softer version, straight out of the Dutch oven right after it's originally cooked.
To crisp leftover pulled pork: Add 1 tablespoon of extra virgin olive oil and the pork to a pan over medium heat. Do not turn until bottom is browning and crispy. Flip with a spatula and warm through.
Build a bowl: In a bowl, layer (from bottom up) loads of microgreens (rainbow mix), the crispy pork, sliced avocado, pickled red onion, and pumpkin seeds.
