IT'S 100 DEGREES!? NO PROBLEM!

It has been 100 degrees for the second day in a row here in Northern California and I suspect that the heat isn't letting up any time soon. My mom recently posted a great gazpacho that she loved from The Whole 30 Cookbook. Given that our garden is currently ripe with tomatoes and our CSA box had tomatoes plus gorgeous varieties of cucumbers, vibrant red onions, zesty garlic among other great items; I couldn't resist trying the recipe! Honestly, it was DELISH. I think it will quickly become a weekly staple throughout our heat wave/August. Sure, I have to imagine that all the fresh ingredients play a very large role. The reason this dish is so good is precisely because it's so fresh. Nonetheless, the only thing I bought today were crushed San Marzano tomatoes to thicken the base. Yum. Yum. Yum.

So yes, gazpacho is a great starter but we are protein people. To compliment the soup, I also made a red snapper ceviche that was to die for. Interestingly, I went in to the market thinking I wanted tilapia or another mellow white fish but my butcher/fish monger did me right and steered me correctly in the direction of fresh, wild, locally caught snapper. Thank goodness! Fresh. Easy. Satisfying. Delicious. We added a mixed green salad and a solid Atrea Rose and that was it! Recipe is below. I can't wait to make it again -- no "cooking" required!! By the way, we topped the ceviche with loads of cilantro and avocado but both are optional. They can always be served with tostadas or tortilla chips :)

The notes call for a long marinade time -- I disagree. With all that citrus (fresh lemon and lime juice) our ceviche was ready within 20 minutes. Perfectly fresh -- if you over-marinate, the fish becomes chewy and starts to fall apart. ie, not worth it! Keep a close eye. This link explains it all: The Science of Ceviche
