THE BEST SALAD EVER

Let me say this. This salad is the best in the world: it is a kale, Brussels Sprouts, and almond raw salad! We made it tonight and kept saying ....why did we put this one on pause!? While the Brussels Sprouts season is generally September through February, they are available year-round. The key, as with any raw salad, is to make it soon after you bring the ingredients in from the garden or home from the store. We make this one for ourselves and have also prepared it when entertaining. Each time, people are surprised and will always asks for the recipe! No joke. (Epicurious rules!) It's a sturdy salad - it can be made ahead and works with steak, shrimp, chicken, pork, scrambled eggs, as a side to a sandwich... you name it! And, it lasts for days thereafter in the fridge. Healthy never tasted so good!

My parents are coming next week and my mom did a recent 30 Clean challenge with me. She rocked it!! My Dad...well, he's another story. He's very regimented. He has breakfast at 7 am, lunch at noon, and dinner at 6 pm. Every day. Can you tell he was in the Navy at one point? While he's a healthy guy (at 70 yrs old he golfs, travels, and is still working/connected to the professional world) when it comes to nutrition, he's set in his ways. He's definitely a fan of the old food pyramid. He loves hot dogs on the grill, steaks, eggs, bacon, bread, ice cream. Wendy's! Wheat Thins! Thomas' English Muffins! Processed cheeses! The normal American diet! I CANNOT wait to make this dinner for him bc I know he'll love it. And, he'll be eating all sorts of other healthy goodies here that he will love and will have no idea are "clean" or better for him. Game on.

As people age, I think it's more and more important to add additional whole foods in the form of vegetables plus clean proteins, and healthy fats to their diets and to steer clear of too much sugar. Wait, as I sit here and type this, I realize I'm talking about my tween too! There's no doubt that all people can benefit from this kind of nutrition. Clean eating regulates hormones and reduces inflammation. This isn't a trendy diet. It's fact.
