KID & ADULT FAVORITE! SPICY CHICKEN NUGGETS

My son is RAVING about these yelling, "HOW can these be healthy!?? They are SOOO GOOD!". He's right. This recipe comes from my awesome friends Erika & Mike and is a definte crowd pleaser. Just like they are. Try it - you can thank me (THEM) later!!

RECIPE

Ingredients 1lb chicken breasts (I buy Mary's free-range organic boneless/skinless breasts) 1/4c almond flour (I love Bob's) 3/4 tsp sea salt (Kosher is fine if you don't have a better/cleaner version. Use what you have!) 1 tsp garlic powder 1 tsp paprika 1/8-1/4 tsp cayenne 1/8 tsp black pepper ~1/4c melted coconut oil Directions 1) Mix flour and seasonings in a bowl (large enough for all of the chicken) and mix. 2) Cut chicken into small chunks, about 1-1 1/2in chunks. place in bowl. 3) Mix, coating chicken thoroughly. 4) Place coated chunks evenly spaced on a cookie sheet. Do not crowd. 5) Melt coconut oil. Drizzle over chicken to lightly coat. 6) Bake in preheated oven (425 for convection (my preferred method) or 450 conventional) until chicken's internal temp reaches 180deg F ( about 10-12 minutes convection, 12-14 for conventional)

I served ours with a spinach and almond salad (as seen above) but these little gems are so versatile that they will be great any way you like!
