EASY 3-INGREDIENT PALEO PANCAKES

I love these. Because regular pancakes are loaded wtih carbs and sugar, I haven't gone near them in a long time. These are a great healthy alternative!
RECIPE
Pancake Ingredients
1 egg
1 ripe banana
1 T almond butter
Directions
Mash banana in a bowl. Add egg and almond butter and mix together well.
Heat a little bit of ghee or butter in a non-stick pan on med to med-high
Spoon out batter onto skillet (you can make one large pancake or several small pancakes as I have done above). Please note that the batter is very runny -- it is supposed to be! These pancakes are very thin (like crepes) which is why I like to stack them.
Cook about 3 minutes per side
NOTES: 1) use a thin spatula when flipping 2) serve and eat immediately
Topping Options
sliced strawberries with almonds or macadamia nuts
blueberries
sliced bananas
dusting of cinnamon
sprinkle of salt
add a dash of vanilla and/or nutmeg to the batter
