IN-HOUSE CHALLENGE

We have what's called 'in-house challenge' at our home. The idea is to pull ingredients from whatever the fridge/pantry holds and make something spontaneous. Truth-be-told, this has happened more often than not over the past several months. I used to cook a lot and then I stopped. I was burnt out, uninspired, and hated going to the store. It wasn't until the 30 Clean challenge came along that I got excited again and really understood how clean meals (because they include so many whole foods) are some of the most delicious and quickest to make!
Time is my mother's greatest concern. She wants to join in but is one of the busiest people I know. She will need to find a day to shop and do a little ahead-of-time prep, but then she'll be well on her way. She's an excellent home cook but that's not the point. If you can turn on your oven and know how to chop, you're golden.
Today's In-House Challenge: I already had a hard boiled egg in my refrigerator. Then, the Whole Foods chicken breakfast sausage only took about 7 minutes to brown on the stove. Similarly, the vegetables were a quick chop since I was just serving myself. I threw everything into a bowl and that was it!

Breakfast Bowl
Ingredients a handful of red leaf lettuce (or any favorite green)
a raw salsa (you can use store bought - just make sure it has no added sugar)
Whole Foods Chicken Breakfast Sausage
1 hard boiled egg
salt and pepper, to taste
Directions for Homemade Salsa
Chop small amounts of cherry tomatoes, red/purple cabbage, red tomatoes, red radish, red onion, cilantro, and jalapeno (optional).
Add these vegetables to a bowl.
Press one small garlic clove, add juice from 1/2 lime, add a sprinkle 1/4 tsp of Kosher salt. Stir.
Top with roughly chopped cilantro (optional)
Build a Bowl
At the bottom of your bowl, layer an handful of your favorite greens.
Scoop salsa on to one side of bowl
And Whole Foods chicken breakfast sausage, crumbled next to it.
Add one hard boiled egg, sliced lengthwise and sprinkle with salt and pepper.
